We are inspected by the FDA and the USDA twice a year, with surprise inspections occurring on a random basis in the meanwhile. (We had such an surprise inspection from the USDA just last week.) They literally just show up at the door, unannounced. Then each of our customers hire independent firms to inspect us on an initial, then annual basis, but never on a surprise basis, unless they receive an end user complaint. We always know a week in advance when the independent inspectors are coming. They are very expensive, so you don't see as much of them as you do the state and federal inspectors. That's how it works. Growing it in the Kitchen garden, then I know it is not flavored with E-coli. Of course it will be interesting to see what we have to do this year to kill off those *&^%$ Asian stink bugs.
